Coffee farmer Ismael José de Andrade owns three farms in Brazil. He is increasingly focusing on sustainable coffee cultivation and organic farming. He also does a lot of research in the field of fermentation and presents new, outstanding microlots from Finca São Silvestre every year.

About the taste
The Brazilian Red Catuaí are harvested ripe and then fermented aerobic. This means that fermentation takes place without oxygen. This ensures that fruity notes develop stronger and more intensely in the coffee bean and later develop a more complex cup profile.
