From bean to bottle

Through our bean 2 bottle approach we want to bring you as much transparency as possible. We want you to be able to trace the coffee in your beloved 25 GRAMS bottle back till the farm that produced it. By scanning the QR-Code on the bottle you get every step the coffee bean takes. FARMER: METAD

METDAD is a family-owned business who ́s mission is to produce, process and export premium coffee from Ethiopia with a big focus on corporate and social responsibility. They work together with over 2000 outgrower-farmers that grow the coffee seedling they get from Metad and bring the coffee to their washing stations. In the case of this edition, it is the washing station in the village of Halo.

COFFEE BEANS AND PROCESSING

Ethiopia has around six to ten thousand different coffee varieties, most of them labeled as Mixed Heirloom varieties. The 25 grams of coffee you find in each of our bottles are heirloom varieties and are grown at an altitude of 2100, where you will find a much cooler climate. This, in turn, allows the coffee cherry to ripen at a slower pace and thus, to develop all the properties we so crave for.

The hand-picked green coffee goes through a “washed” processing. Here the flesh and the skin of the coffee cherry is removed by a depulper and then the coffee is cleaned with water in a tank where the rest of the flesh is removed by fermentation. In the next step the coffee beans are dried on raised African beds as seen in the picture below. After this step the coffee is sent to a dry mill where it is packaged and prepared for export. This happens in METADS facility in the outskirts of the capital Addis Ababa.

IMPORT: CAFÉ IMPORTS

Café Imports is sourcing high quality coffee from around the world. Their European subsidiary is based in Berlin. They put huge emphasis on quality control and run several state of the art sensory laboratories. One huge part of separating good coffee from bad is to cup it.

ROASTING: WILDKAFFEE

25 GRAMS is very excited to continue our collaboration with Wildkaffee as our roasting partner. Nestled in the Bavarian Alps the roastery was founded by Stefanie and Hardi Wild in 2010. Over a decade later the roastery is now very well known within and beyond the borders of its native Garmisch-Partenkirchen. A relentless love for coffee, a state-of-the-art machinery and warehouse, attention to detail and rigorous quality control make them one of the best in the game.

They roasted our Ethiopian coffee with a light to medium roast profile. That way the fresh and fruity notes are brought out while keeping it as clean as possible without contaminating the cold brew with too much roast flavors. Thanks again for an amazing coffee, guys
